Strong and Free Cuisine

True North Cookbook Cover

What It Is: The culinary world is finally paying attention to what’s happening here in Canada – and for good reason. Upstart chefs with bold vision and an interest in taking advantage of Canada’s natural bounty of ingredients has led to many a celebrated restaurant and star chef – like Montreal’s Derek Dammann, the main force behind this Canadiana collection of recipes. It’s divided up by our nation’s vast wilderness – for example, in the Pacific section you’ll see recipes for Chinook on the Beach Haida Gwaii Style – for a unique take on ‘living from the land’. It also features an approach I (and celeb chefs worldwide) advocate for – nose to tail eating, meaning all parts of the animal are considered for consumption, out of respect for taking a creature’s life. No matter how you slice it, this is a cool foodie gift idea that’s proudly Canadian.

Who It’s For: The hostess. The chef-in-training. The extreme foodie.

What It Costs: $40 retail.

Where It’s At: Fine booksellers across Canada or Amazon.ca

BONUS entry into my new Samuel’s Hats giveaway – tell me in the comments below; would you buy this cookbook as a gift? For who?
